GAVIN’S TASTY TIPS FOR THE BEST BBQ

• Basting – basting meat on the BBQ with a tasty sauce, marinade or spicy rub will add something special to your sizzle. Have fun with flavour combinations such as chilli and red pepper for a spicy steak, tomato and basil to bring out the best of your burgers, or honey and mustard for succulent sausages.

• Slow and steady sausages – for best results use a low to medium heat when cooking sausages, this way you will avoid splitting the skins or burning the outsides and undercooking the centre. Oil the grill bars on your BBQ and don’t turn too often as this can reduce the heat and affect cooking results.

• Buy the best – Cornwall offers some of the finest produce in the country so take advantage and try and buy the best quality meat you can afford.

• Clear advice – whatever you are cooking on your BBQ, make sure any juices run clear and that the food is piping hot throughout. Also ensure that raw meat does not touch cooked meat as this could lead to contamination which could cause food poisoning. Wash hands and utensils that have handled raw meat as soon as possible as an extra precaution.

• Drink and dine – Try and match your food with the drinks you will be serving. For example, Cornish ale is a great partner for sausages, red meat such as steaks and burgers taste even better with red wine, whereas chicken and fish may work better served with white wine or spirits.

• Fun and flavoursome – be adventurous and try to have some fun with your BBQ menu. Mixing fish or shellfish with meat such as bacon or hogs pudding can work really well and will be sure to impress family and friends.

• Professional touches – for a ‘grilled by a professional’ look, create grill lines by searing cuts of meat on a very high heat on both sides. Once you have achieved the look you want, return to normal cooking, turning infrequently.

• A good grilling – BBQ’ing is one of the healthiest ways to enjoy meat, as fats tend to evaporate on the grill. This also has the added benefit of enhancing flavour!

• Allergy awareness – with an increasing number of people now suffering with allergies or food intolerances it is worth bearing in mind the nutritional requirements of your guests.
