Try a ‘blue’ pumpkin, try a Cornish Crown Prince Squash

'Crown Prince' is a blue/grey skinned variety of pumpkin that is a little more unusual than tha traditional orange varieties. Although it may not look as attractive, it is one of the best varieties for culinary use.
Cut open the squash and you will find bright orange flesh that has a fine flavour which is excellent when roasted.

Part of the same family (the cucurbitaceae family) as courgettes and cucumbers. pumkpins and squashes are pretty smiliar in their make ups. When cooked they behave in similar ways. They are heavy and firm when uncooked and after an hour of cooking they sweeten and become soft and a delight to eat as much of the water contained in the pumpkin or squash when raw is cooked off.

Sliced into wedges, tossed with olive oil, plenty of seasoning and a few choice flavourings such as sage, garlic, rosemary or cinnamon, pop in the oven and they will emerge after an hour soft, and irresistibly caramelised.You don't even need to peel the squash as they can be roasted whole and the insides scooped out. Great to serve and share at a dinner party or to win over the kids.
