Baked Crown Prince Squash Frittata
Method
Enough for four. Serve warm with a green salad and crusty bread.
1. Preheat the oven to 190C / fan 170C / Gas mark 5 and grease a large shallow ovenproof dish.
2. Heat the oil in a large frying pan and sauté the onion for 3-4 minutes until softened.
3. Add the squash and fry over a brisk heat for 3-4 minutes, stirring frequently. Stir in the stock, cover and simmer over a gentle heat for 5-6 minutes until the squash is slightly tender. Add the ham.
4. Pour the mixture into the prepared dish. Beat the eggs with the marjoram and a little seasoning. Pour into the dish then bake for 20-25 minutes or until the frittata is firm and lightly golden.

2 tbsp sunflower oil
1 large onion, finely chopped
450g Crown Prince squash, diced into bite-sized pieces
200ml chicken or vegetable stock
115g smoked ham, diced
6 eggs
2 tsp fresh marjoram, chopped
Sea salt and freshly ground black pepper
