Saturday evening the table is laid, best cutlery and glasses gleaming but what to cook - here's our suggestion for the perfect meal this week: -
Start with some mixed charcuterie from The Courtyard Deli and olives from The Cornish Olive Company, a rosemary and rocksalt foccacia from BakerTom and a dipping bowl of Monte Pollino extra-virgin olive oil and 12 year aged Gran Sigillo balsamic vinegar (if you've never tried this astonishing vinegar before we'd recommend it).
Follow with a 21 day matured fillet steak from Trevarthen's (10% off this month), chips, sauteed or Cornish new potatoes, roasted cherry vine tomatoes and steamed asparagus. We'll leave the sauce to you...but all of our Cornish cream is 10% off through May if you want to fry off a few mushrooms, add a splash of white wine, some chopped fresh tarragon, a touch of double cream...
Cornish strawberries, fresh from Trevaskis Farm with Trewithen clotted cream or, for a 'cheffy' twist, with a drop or three of the aged balsamic vinegar.
What about drinks we hear you say? We'd say Camel Valley Rose brut as an aperitif, chunky Cline Californian Zinfandel with the steak and an Origin Finca Shekinah coffee to finish.
For a different (but equally calorific) accompaniment to the steak try a garlic herbed butter. Take a handful of chopped fresh herbs - parsley, tarragon and chives for example, very finely chopped garlic, rocksalt and ground black pepper, and a tablespoon of lemon juice. Mix with slightly softened Cornish butter using a fork, spread onto a sheet of clingfilm and then roll into a cylinder. Chill well in the fridge and to use just cut a disc off the end and place on top of the freshly cooked steak - how thick the disc is id entirely up to you. You can also use the garlic herbed butted to make garlic bread - slice very thin disks and place into cuts made in a baguette (don't cut the baguette all the way through). Wrap the baguette in foil and bake in a moderate oven for twenty minutes.
