Roast Pork Collar

If you are not sure how much meat you'll need, allow 100-175g of uncooked meat per person. A joint of around 900g will feed 4-6 people.

Pre-heat your oven to Gas mark 4-5, 180C, 350F

Weigh your joint and calculate the cooking time:

30 minutes per 450g plus 30 minutes at the end (medium cooked)
35 minutes per 450g plus 35 minutes at the end (well done)

Place on a rack in a roasting time and open roast the centre of a
pre-heated oven for calculated cooking times.

Once cooked, allow the joing to stand for 10 minutes prior to carving -
this allows the juices to settle giving you a more succulent joint.

To check that the meat is cooked to your liking, use a meat thermometer inserted into the centre of the joint. It should read 75-80C for a medium cooked joint and 80-85C for well done.

Serve with a mix of fresh, seasonal vegetables.
