Bubble and Squeak

Method

A comforting winter dish that can be enjoyed for breakfast, lunch or as a quick supper.

1. Mash the potatoes with a fork or mixer.
2. Shred the leftover veg and add to the potato mixture.
3. Heat a non-stick frying pan over a low to medium heat and add a thick slab of butter. Press the potato mixture into the pan and leave to fry until a golden crust has formed on the bottom. Turn and cook the underside.
4. Serve warm with leftover gravy, or with a poached egg on top.

Ingredients

You will need:
-Leftover cooked potatoes (roasted, new, mashed - whatever!), brought to room temperature
-An equal portion of leftover vegetables
-Leftover bacon and/or sausages, cut into small pieces
(optional)
-Butter
