Chorizo in Sherry
Method
Serves 1 or more
1. Fry the onion in the olive oil until golden brown and aromatic.
2. Add the Chorizo and fry till it browns slightly.
3. Add the Garlic, Paprika, Cumin and Sherry. Cook until the alcohol burns off the add ½ a cup of water and the pepper.
4. Simmer for about 5-10 minutes until sauce has thickened slightly.
5. Stir in the Parsley and serve in a hot Earthenware dish.
6. Serve with lots of bread for dipping

1 tablespoon Olive Oil
1 Chorizo Sausage (Sliced)
½ Red Onion (Finely Diced)
2 Garlic Gloves (Very Finely Chopped)
½ teaspoon of Paprika (hot or sweet depending on your mood) ¼ teaspoon of Cumin Powder
¼ cup of Spanish Sherry
1 tablespoon of Parsley (Chopped)
