Yummy Sausage and Pasta Salad
Method
Enough for 2 lunchbox servings. A great way to use up leftover sausages.
1. Slice the sausage into bite-size pieces.
2. Cook the pasta according to packet instructions, until tender. Drain into a sieve and run under the cold tap until cool.
3. Shake the pasta well to remove any excess water, then tip into a bowl and stir in the oil to prevent from sticking. Mix in the sausages, tomatoes, onions and salsa. Taste and season as required. Divide into two airtight
containers.
Ingredients
Leftover cold sausages, either one regular or two chipolatas 85g / 3 oz dried pasta, penne or fusilli works well
2 teaspoons olive oil
2 cherry tomatoes, cut into small wedges
2 spring onions, finely chopped
2 tablespoons ready-made tomato salsa
