Sweet Red Cabbage
Method
Serves 6-8 as a side dish. Goes well with gamey dishes.
1. Put the vinegar, caraway, salt and sugar into a casserole or stainless steel saucepan with 125ml / 4 fluid oz water. Add the cabbage and bring to the boil.
2. Lay the apples on top of the cabbage, cover and continue to cook gently for about 30+ minutes, until the cabbage is tender. Take care not to overcook or the colour and flavour will be ruined.
3. Taste and add more seasoning or sugar if necessary. Serve warm.
Ingredients
450g / 1 lb red cabbage - quartered, cored and finely sliced across the grain
450g / 1 lb Cox's or other tart apple - peeled, cored and cut into quarters
1 tablespoon wine vinegar
1 teaspoon salt
2 heaped tablespoons sugar
2 teaspoons roughly ground caraway seeds
