Pork Tenderloin with Blueberry Sauce
Method
Makes 4 servings
1. Preheat grill. Grill the pork, turning occasionally, until cooked through. Remove to a platter; cover to keep warm.
2. Meanwhile, in a large skillet melt the butter over a medium-high heat. Add onions, salt and pepper; cook for about 10 minutes or until onions are golden. Add the sugar and cook until the onions are caramelized, about 3 minutes longer. Now add the port, balsamic, blueberries and tomatoes and bring to a boil. Remove from heat.
3. Thinly slice the pork and serve with the sauce.

450g / 1 lb pork tenderloin
2 tablespoons butter
2 medium onions, peeled and thinly sliced
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons sugar
120ml / 4 fluid oz port wine or sweet sherry
2 tablespoons balsamic vinegar
125g / 4½ oz fresh blueberries
125g / 4½ oz chopped cherry tomatoes
