Broccoli Salad
Method
1. Place the broccoli florets in a large bowl. Add the crumbled bacon, onion, raisins (if using), cheese and tomatoes.
2. To make the dressing, combine the remaining ingredients in a small bowl and stir well. Add to broccoli mixture, toss gently and serve.
Ingredients
-The florets from 1 head Cornish broccoli, washed and trimmed into bite-size pieces
-6 to 8 slices Cornish smoked streaky bacon, cooked and
crumbled
-1 small red onion, chopped
-110g / 4 oz raisins (optional)
-225g / 8 oz mature Cheddar, diced
-About 10 cherry tomatoes, halved
-240ml / 8 fluid oz mayonnaise
-2 tablespoons white wine vinegar
-50g / 2 oz caster sugar
-Sea salt and freshly ground black pepper
