Broad Bean Salad with Bacon and Goat's Cheese

Method

Celebrate Spring with this easy salad. Adjust the amounts according to the number of portions you need.

1. Dry fry the bacon until crisp and, when cooled, crumble into the shelled and briefly blanched broad beans.
2. Make a simple dressing with equal amounts of lemon juice and extra virgin olive oil, then mix in some roughly chopped fresh basil and mint. Stir this into the bacon and beans.
3. Serve with a handful of rocket with crumbled soft goat's cheese and
ciabatta.

Ingredients

Cornish smoked streaky bacon
Podded and briefly blanched broad beans
Lemon juice
Extra virgin olive oil
Fresh basil, washed and chopped
Fresh mint, washed and chopped
A handful of rocket leaves
Gevrick Cornish soft goat's cheese
Ciabatta
