Salad with Giant Spinach and Strawberries
Method
This dressing is wonderful over cut fruit. Serve the salad with a choice of nuts and cheese.
Pour the sugar, vinegar, salt, mustard powder and onion into a blender and process for 30 seconds. Turn the blender on high and slowly add the olive oil. Finally, stir in the poppy seeds.
Serve over the giant spinach leaves and strawberries. Add sliced red onion rings on top of each serving for added colour.
Ingredients
For the dressing:
3 oz / 75g white caster sugar
4 fluid oz / 110ml raspberry vinegar or white wine vinegar
1 tsp. salt
1 tsp. mustard powder
1 tsp. grated onion
8 fluid oz / 240ml light virgin olive oil
1 Tblsp. poppy seeds.
For the salad:
Cornish giant spinach leaves, washed, chilled and torn
Fresh strawberries, sliced
red onion, sliced into rings (optional)
