Broccoli and Cornish Blue Bake

A good vegetarian dish using the best local ingredients.
1. Preheat the oven to 180C.
2. Cut up the broccoli into small florets and steam until tender.
3. In a saucepan, melt the butter and stir in the flour until combined. Add the milk and stir constantly until the sauce thickens and just starts to come to the boil. Add the grated or crumbled Cornish Blue and stir until
melted.
4. Place the broccoli in an ovenproof dish, cover with the cheese sauce and sprinkle on the topping.
5. Bake for 20-25 minutes or until topping is crispy and golden. Serve with new potatoes.
Ingredients
2-3 heads of broccoli
4 oz / 110g Cornish Blue Cheese
1 pt / 570ml milk
1 oz / 25g plain flour
1 oz / 25g butter
For the topping:
2-3 slices wholemeal or granary bread, made into breadcrumbs 1-2 oz / 25-50g mild cheddar, grated
1 oz / 25g ground nuts (optional)
