Apple Crisp

Method

Enough for 6. A great way to use up stale bread! You can substitute whatever fruit is in season - like pears or peaches - for the apples.

1. Preheat the oven to 190C / fan 170C / gas mark 5.
2. Butter a shallow casserole dish.
3. Place the apples in the dish and gently stir in the cinnamon.
4. Put the bread in the food processor and whiz into coarse breadcrumbs.
5. Mix the breadcrumbs and the sugar together then sprinkle loosely over
the apples.
6. Melt the butter in a small pan then pour carefully over the crumb mixture, soaking it thoroughly.
7. Bake for about 35 minutes, until the apples are soft and the crumbs are golden and crisp.
8. Serve warm with double cream or Homemade Custard (in the recipe index).

Ingredients

1kg / 2.2 lbs Bramley cooking apples, peeled and cored and cut into thick slices
125g / 4½ oz stale bread
75g / 3 oz light muscavado sugar
75g / 3 oz unsalted butter
A pinch of cinnamon

Double cream or pouring custard, to serve
