Cheesy Baked Leeks
Method
Serves 4 as a hearty side dish
1. Preheat the oven to 180?C / gas mark 4 and butter a shallow baking dish. 2. Place the leeks in a saucepan of boiling water and simmer for 6-8 minutes or until just tender. Remove and take care to drain well using a slotted spoon, and arrange in the prepared dish.
3. Beat the eggs with the goat's cheese, yoghurt and half the Parmesan cheese, and season well with salt and pepper.
4. Pour the egg and cheese mixture over the leeks.
5. Mix the bread crumbs and remaining Parmesan together and sprinkle over the sauce.
6. Bake for 35-40 minutes until the top is crisp and golden.

675g / 1½ lb leeks, trimmed, rinsed and sliced in half
lengthways
1 large egg, beaten
150g / 5 oz fresh soft goat's cheese
85ml / 3 fluid oz natural yoghurt
50g / 2 oz Parmesan cheese, grated
25g / 1 oz fresh bread crumbs
Sea salt and freshly milled pepper
