Quick Blinis with Wild Mushrooms
Method
Makes a delicious and special starter for 6. If you are short on time, buy ready-made cocktail blinis.
For the blinis (makes about 18-20):
1. Mix together the flours, baking powder and salt in a large bowl. Add the eggs and milk and beat to make a smooth batter.
2. Heat a large griddle or frying pan then grease with a little oil. Pour small amounts of batter (1-2 tablespoons) on to the griddle, well spaced.
3. Fry for a few minutes until bubbles appear on the surface and the underside is golden, then flip over. Continue to cook for about 1 minute. Keep warm on a plate in a low oven.
For the mushrooms:
1. If the mushrooms are large, cut them in half. Heat a frying pan over a moderate heat and melt the butter. Add the garlic and mushrooms and sauté for a few minutes until the juices begin to run then increase the heat and cook, stirring frequently, until all the juices have evaporated. Stir in the brandy and season.
2. Serve by spooning a little creme fraiche over each blini and topping with the warm mushrooms.
Ingredients
115g / 4 oz self-raising flour
20g / ¾ oz buckwheat flour
2.5 ml / ½ teaspoon baking powder
2 eggs
About 250ml / 8 fluid oz milk
Pinch of salt
Oil for frying
250g / 9 oz assorted wild mushrooms
50g / 2 oz unsalted butter
1-2 garlic cloves, minced
Splash of brandy
Freshly milled black pepper
Creme fraiche, to serve
