Seville Orange Gin
Method
You can substitute vodka for the gin if preferred. Citrus flavour spirits do take time to develop their flavour, but it is well worth the wait! You can also add aromatic spices like cloves, coriander or star anise.
Method:
1. Pare the orange rind, avoiding the bitter pith, and add to the bottle.
2. Add the sugar and any spices. Pour in the gin and seal.
3. Before storing, shake the bottle each morning and evening for a few days until the sugar is fully dissolved. After a week place the bottle in a cool, dry place for three years.
Ingredients
The rind of 4 Seville oranges
8oz (225g) golden granulated sugar
750ml gin
A sterile 1-litre bottle with screw-on top.
