Spicy Seville Orange Chutney
Method
Excellent with cheese or cold meats.
In a large pan, mix the apples together with the oranges (note: do not use the orange peel!). Add the dates and tomatoes then stir in the sugar, vinegar, chopped chillies and salt. Slowly bring the mixture to the boil then reduce the heat and simmer until thick and brown, stirring frequently. Spoon into the warmed jars then seal and label.
Store in a cool, dark place for a few months before eating to allow the flavours to develop.
Ingredients
750g / 1.5 lb bramley apples - peeled, cored and chopped 110g / 4 oz Seville oranges - peeled and diced
350g / 12 oz chopped dates
350g / 12 oz tomatoes, sliced
750g / 1½ lb muscovado sugar
1.7 litres / 3 pints pickling vinegar
25g / 1 oz red chillies
7.5ml / ½ tbsp salt
You will also need:
-A large stainless steel pan - do not use aluminium.
-A quantity of warm, sterile glass jars - place on a tray in the oven at its lowest setting and leave for a minimum of 30
minutes.
-Vinegar-proof plastic lids
