Easy Christmas Yule Log
Method
1. Line a loaf tin with buttered greaseproof paper.
2. Melt the chocolate and butter in a saucepan over low heat.
3. When melted, remove from heat and gradually beat in the eggs, sugar, vanilla and brandy. Stir in the biscuits and cherries.
4. Pour into lined tin and press into shape of tin. Leave to cool.
5. When cool enough to handle, turn onto greaseproof paper and shape into a log and run a fork along the top to create a 'bark' finish.
6. Put into fridge and chill until set.
7. When ready to serve, remove from fridge and sprinkle with icing sugar to serve. Top with festive decorations if desired.
Ingredients
8oz (250g) unsalted butter
8oz (250g) plain chocolate
2 medium free range eggs, beaten
2oz (50g) golden caster sugar
1 tsp vanilla essence
8oz (250g) digestive biscuits, broken into small pieces
1 dessertspoonful brandy*
2oz (50g) glace cherries*
Icing sugar, to serve
