Candied Sweet Potatoes

Method

Makes about 6 side servings

Serve with Roast Turkey dinner!

1. Preheat oven to 190?C / Gas mark 5 / 170?C fan-assisted
2. Cook the sweet potatoes, covered, in enough boiling water to cover for 10 to 12 minutes or until just tender. Drain.
3. Transfer the potatoes to a baking dish. Add the brown sugar and melted butter and stir gently to combine. Bake, uncovered, for 30 to 35 minutes or until potatoes are just glazed, stirring gently twice.
4. Remove from oven and sprinkle with chopped nuts or marshmallows, bake for another 5 minutes. Serve warm.

Ingredients

2lb / 1k sweet potatoes (about 4 medium-sized), peeled and cut into chunks
2oz / 50g light soft brown sugar
2oz / 50g butter, melted
2oz / 50g chopped nuts or a large handful of mini marshmallows (according to preference)
