Glazed Pork Belly
Method
Serves 4.
1. Pre-heat the oven to gas mark 4, 350°F (180°C).
2. Lay the pork belly in a shallow roasting tin, brush with oil and season with black pepper.
3. Make the sauce by crushing the garlic with the salt to a paste using a pestle and mortar then whisk it together with the remaining ingredients. 4. Pour the sauce all over the meat, making sure each piece gets a good coating. Bake for 45 minutes then baste and cook for a further 25 minutes. 6. Serve with the reduced sauce spooned over. Goes great with rice and a
salad!

3 lbs (1.35k) pork belly, trimmed and cut into thick strips 2 tablespoons oil
2 large cloves garlic, peeled
2 level teaspoons sea salt
10 fluid oz (275ml) red wine
2 tablespoons Worcestershire sauce
2 tablespoons red wine vinegar
2 tablespoons tomato purée
2 rounded teaspoons mustard powder
2 teaspoons runny honey
2 teaspoons freshly grated ginger
Freshly milled black pepper
