Chilli Baked Beans with Streaky Bacon
Method
A quick and easy meal for one, or a snack for two
1. Heat the oil in a small saucepan. Add the onion, garlic and chilli and cook for 2-3 minutes or until the onions have softened. Add the ketchup and beans and cook for a further five minutes.
2. Heat a griddle pan until hot. Add the ciabatta and bacon and fry,
turning once, until the bread is griddled on both sides and the bacon is crisp. Drain the bacon on kitchen paper.
3. To serve, place the griddled ciabatta onto a clean plate, place the
beans on top and sprinkle the bacon on top.
Ingredients
1 tbsp olive oil
½ onion, finely chopped
1 clove garlic, chopped
½ red chilli pepper, deseeded and finely chopped
2 tbsp tomato ketchup
400g/14oz can cannellini beans, drained and rinsed
1 small ciabatta, sliced and drizzled with olive oil
4 slices streaky bacon
