Coppa, Fried Onion and Honey Bruschetta
Method
Heat the olive oil in a frying pant over a medium heat. Add the sliced onion and cook, stirring occasionally, until golden and staring to crisp, this takes about ten minutes. Slice bread into 10 pieces, each about 1 cm thick and toast. Layer with coppa, drizzle with honey garnish with the fried onion and spoon a little of the cooking oil over the top.
