Parsley has two main varieties, curly and flat leaf. Flat leaf parsley has a slightly more pungent flavour than curly and is better suited to cooking. Parsley is an excellent accompaniment to fish and a simple parsley sauce can be made by combining 5 tablespoons of parsley with 1 tablespoon of single cream, 1 teaspoon of lemon juice and a litre of béchamel sauce. Combine all ingredients in a saucepan and warm through, season to taste and serve with fish and new potatoes
