Grown here in Cornwall, gooseberries are largish, solid green berries, sometimes with a blush of colour and with a familiar tart flavour.

Popular in desserts like gooseberry fool or crumble, and in jelly or jam, puréed gooseberries also go well with mackerel and other rich meats. ‘Top and tail’ gooseberries before use by snipping off the stem and flower ends with scissors.
