Nectarines are a smooth skinned variety of peach and are usually slightly smaller and sweeter than their fuzzy skinned relative. Nectarines are great enjoyed on their own or can be poached, grilled or baked.

For roasted nectarines halve and de-stone the nectarine and cover with a mixture of grated ginger, soft brown sugar and lime juice. Place in an oven dish, pour cold water around the fruit and bake in a medium oven for 30-40 minutes. Serve warm with ice cream and a little fresh mint. Subject to availability on a daily basis.
