Marinated Fig Skewers

Method

Makes 16 skewers. The specialty ingredients are all available on the Cornish Food Market website.

1. Cut the figs into 16 wedges and sit them in a non-metallic bowl. Mix together the oil and vinegar then pour it over the figs. Season well with salt and pepper then leave to marinade at room temperature for about 30
minutes.
2. Thread the figs on to 16 short wooden skewers with some prosciutto, a wedge of mozzarella, and a basil leaf.
3. When all 16 are completed, arrange them on a plate and drizzle over the remaining marinade. Serve at room temperature.

Ingredients

2 large or 4 small ripe figs
3 tablespoons Lunaio Extra Virgin Olive Oil with Basil
2 teaspoons Perche Ci Credo Vincotto or other quality red wine vinegar
8 slices Prosciutto di Parma, halved lengthways
2-3 balls of Buffalo Mozzarella, cut into 16 wedges
16 medium-sized basil leaves
Sea salt and freshly milled pepper
